When I lived in Spain for a month during my gap year, I missed asian foods rice a lot, so I ate paella at least once every couple days (it kind of reminded me of fried rice.) It was by far my favorite dish I tried in Europe, especially in Valencia. Since I've been back in the states I've only had it one or two times, and I never dared try to make it. But tonight it was Andrew's turn to choose the dish for our virtual date night, and this is what he chose. Luckily, it was actually quite easy and besides some burnt pieces of rice! We omitted a lot of the ingredients from the original recipe (like saffron because we are poor students), but it still tasted really delicious!"
