My best friend Nicole loves to experiment with food. She is an international student from Hong Kong, and often makes Cantonese style dishes (there is ZERO good Asian food in Baltimore.) Today is the first day of school for Hopkins students, and she's starting her senior year without me, so I'm missing her a little more than usual. I'll definitely miss being her taster this year; she's a pretty amazing chef, and the type of person who will always save you the best parts of the dish (the side, fatty pieces, in this case.) This dish is sweet, savory, juicy and tender, and is possibly my absolute favorite Chinese entree.
